Regular Aloo Dum Recipe/ Dum Aloo Recipe


Aloo dum or dum aloo is a very popular recipe across India. It normally serves as a side dish. It goes
well with rice, chapati, paratha, and naan. Ingredients which I have used for this recipe are:


4 boiled potatoes cut in big cubes
2 chopped onion
1 tbsp ginger n garlic paste
4 tbsp cooking oil
1 chopped tomato
1 tsp salt
1/4th tsp sugar
1 bay leaf
1 tsp turmeric powder
1 tsp red chili powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala powder
1/2 tsp Kasuri methi
2 tbsp chopped coriander leaves
2 slit green chili
1/2 cup warm water


Heat oil in a kadhai/pan. Add 1/4th tsp sugar. Wait till sugar color changes. Then immediately add bay leaf and chopped onion. Fry the onion till slightly golden brown. Then add turmeric and red chili powder. Fry for a second or so. Now add ginger and garlic paste. Fry for 1-2 min. Then add chopped tomato. Immediately add salt.Then fry in a low flame till oil separates. Then add cumin powder, coriander powder, garam masala powder, Kasuri methi and slitted green chili. Fry for 1 minute. Then add boiled potato cubes and fry for 2 min in medium flame. Now add 1/2 cup of warm water. Cover the lid and cook on low flame for 10 min.Check in between. Finally, add chopped coriander leaves and a little bit of garam masala powder. Slightly fry. Now your regular aloo dum is ready to serve.
